This high protein caramel cheesecake fruit dip is sure to impress. The base is made with 2% fat cottage cheese. I recommend the brand Good Culture. I know a lot of people have a hard time accepting cottage cheese can be both sweet and used in dessert recipes, but I assure you it can. Just like cream cheese, if you add a few things to it, the flavor profile changes. Plus whipping it in a blender makes all the textural difference. Cottage cheese mimics cream cheese once blended. It’s tangy just like cream cheese and once blended with a sweetener, tastes like cheesecake. I like to use a small blender for this job because this recipe is intended to be a single serving.
This caramel cheesecake dip is macro friendly all around. Therefore, the sweetener is sugar free instant vanilla pudding mix. This is what I use in all of my ninja creami protein ice cream recipes. It tastes great and is extremely low calorie. The recipe only calls for 1 tablespoon but feel free to add two if you like it really sweet. Vanilla extract is added for flavor and that all gets blended until silky smooth. If you have a hard time getting everything to blend, add one tablespoon of unsweetened almond milk to help. Don’t add any more than that or you’ll end up with soup. I recommend blending and using a rubber spatula to scrape several times between processing the dip.
Finally, the dip is topped with sugar free caramel sauce. I grabbed a bottle of Smucker’s sugar free caramel sundae sauce, and it worked great. While it’s not a low-calorie food, it is sugar free and only a small amount is used to top the dip. The caramel pairs perfectly with the “cheesecake” flavor. In keeping with the macro-friendly theme, I highly recommend slicing up a Granny Smith apple to eat with this dip. It’s the healthiest of all apples. Ingredients
- 1 c low fat cottage cheese 2% Good Culture
- 1 tbsp sugar free vanilla instant pudding mix
- 1 tsp vanilla
- 1 tbsp unsweetened vanilla almond milk optional
- 1 tbsp store bought caramel sauce Smucker's sugar free
Instructions
- Add cottage cheese, pudding mix and vanilla to a blender.
- Blend until smooth.
- Add 1 tbsp of almond milk if the mixture needs more liquid.
- Scrape the blender or food processor down multiple times and continue blending until you there are no curds visible.
- Put dip in a bowl and top with sugar free caramel sauce (Smucker's).
- Serve with Granny Smith apple slices.
