A trifle recipe that will leave people in awe. This brownie mocha trifle is shockingly beautiful with layers of chewy fudge brownies, vanilla mocha pudding, whipped cream and crunchy toffee bits. It looks complicated and time consuming but it’s anything but. This trifle recipe utilizes the best shortcuts in cooking with boxed brownies and boxed pudding mix. The hardest part is waiting for the brownies to cool to cut and assemble.

The texture of this dessert is out of this world. You have chewy brownies, creamy pudding and light whipped cream plus the crunch of the toffee bits. Each bite is a little different and equally delicious. I will admit, it’s hard scooping that first serving because it’s so pretty you feel bad eating it! Then you taste it, and all that guilt goes away.  This is a dessert that’s special enough to serve over holidays!

Tips for the Best Trifle

 

  • Be sure to buy the family size box of brownies!
  • Line the 9×13 pan for the brownies in parchment paper for easy removal! You need all those brownies!
  • Bake the brownies to achieve a fudge consistency and not a cake consistency. The fudge version holds up better in the trifle.
  • You can use homemade whipped cream for this recipe if you don’t like cool whip. Either way, just make sure whatever you use is completely thawed.
  • The heath bits are sold in the chocolate chip section of your grocery store.
  • Make sure you get INSTANT coffee granules that dissolved in water and not traditional ground coffee.

 

Brownie Mocha Trifle

Ingredients
  

  • 1 family size box prepared brownies in a 9x13 dish
  • 2 3.4 oz boxes instant vanilla pudding mix (small boxes)
  • 1 3/4 C 2% milk
  • 4 tsp instant coffee granules + 2 TB hot tap water
  • 16 oz Cool Whip (2 regular size tubs)
  • 8 oz Heath toffee bits (1 bag)

Instructions
 

  • Prepare brownies in a 9x13 dish per package instructions for a fudgy consistency and not cakey. Let cool completely. Cut in bite size pieces.
  • To a large bowl whisk both boxes of pudding mix with cold milk. Let set for a few minutes.
  • While the pudding sets, in a separate bowl mix the instant coffee granules with very hot tap water. Stir to dissolve.
  • Pour instant coffee into the vanilla pudding and whisk.
  • Fold in an 8 oz tub of thawed cool whip into the pudding mixture.
  • In a trifle dish assemble the layers as follows: brownies, half the pudding mixture, 4 oz or half a container of cool whip, heath bits. Repeat those layers.
    Top with a dollop of whipped cream and any remaining heath bits.
  • Cover with foil and refrigerate for 2+ hours
