This Sausage Gravy Tater Tot Breakfast Casserole is super indulgent yet easy to prepare. Layers of sausage gravy, cheese and crispy tater tots get topped with fried eggs for an ultimate weekend breakfast. A perfect sweet pairing to this casserole would be either my fluffy pancakes for something quick or if you have time, my world’s best cinnamon rolls.

 

This recipe begins with what will become the sausage gravy. The only cooking involved is the browning of the breakfast sausage. Flour is added and cooked into the meat and then that is the bottom layer of the casserole. The milk gets poured over the meat right into the casserole dish, and the heat from the oven will thicken it into gravy as it cooks. The second layer is cheese. Normally my recipes call for cheese that gets manually shredded to ensure it melts perfectly but with this recipe, the bagged pre-shredded cheese is just fine. The third layer is crispy crown tater tots. Stick with this shape, they get the crispiest! Topping the individual casserole portions with eggs is optional but definitely recommended. There is no replacing that broken yolk dripping into the gravy and potatoes. It brings it all together perfectly.

 

The easiest way to prepare 12 fried eggs at a time is in the oven if you don’t have a large enough skillet. Line a sheet pan with parchment paper and crack the eggs right on top. The casserole bakes at 425 degrees which is the perfect temperature for the eggs to bake at as well. You only need 10 minutes for them to cook to a perfect medium. Just add the sheet pan of eggs to the oven for the casserole’s final 10 minutes of baking. Top the individual casserole portions with two fried eggs and enjoy!

 

 

Sausage Gravy Tater Tot Breakfast Casserole

Sausage gravy, shredded cheese and crispy crowns get baked together and topped with fried eggs for a perfect savory breakfast casserole.

Ingredients
  

  • 1 lb breakfast sausage
  • 1/4 c flour
  • 2 c 2% milk
  • 8 oz shredded cheese
  • crispy crown tater tots
  • 12 eggs
  • salt
  • pepper
  • garlic powder
  • onion powder
  • paprika
  • cooking oil spray

Instructions
 

  • Preheat oven to 425 degrees.
  • Cook breakfast sausage over medium heat until brown and caramelized.
  • Add flour and cook 2 minutes.
  • Add the cooked sausage and flour to the bottom of a 9x13 dish.
  • Pour milk over the sausage and stir.
  • Evenly sprinkle 8 oz shredded cheese on top.
  • Season with salt and pepper.
  • Top with a single layer of crispy crown tater tots.
  • Season the tater tots evenly with garlic powder, onion powder and paprika.
  • Bake for 30 minutes or until the tots are golden brown.
  • Layer a sheet pan with parchment paper and crack in 12 eggs.
  • Add the sheet pan of eggs in with the casserole for the final 10 minutes of baking.
  • Remove and dish out portions of casserole and top with the eggs.
