Protein pancakes are a great way to enjoy your favorite breakfast item without eating a ton of empty calories. Getting protein first thing in the day is extremely important to fat loss and setting the tone for your glucose levels that day. Traditional pancakes have almost no protein, but with a few swaps, this recipe makes 3 medium/large pancakes and comes in at 35 grams of protein. I’ve made multiple versions of protein pancakes and so far, this is my favorite recipe. It utilizes a banana to get that fluffy texture that is so desired when eating pancakes. Without the banana the pancakes can lean on the rubbery side.

The addition of the banana is paramount for texture, but it also affects the taste. It tastes like banana bread pancakes. Come to think of it, I should probably call them that. Maybe I’ll change the name if I find an even better way to make regular protein pancakes. But for now, they’re just protein pancakes. You can’t escape the banana flavor and I personally love that. If you hate banana, you’ll want to avoid this recipe.

Tips for the Best Protein Pancakes

 

  • Don’t use too much water. The pancakes live and die by the amount of water added. A drop too much can make them runny and stick to the pan and a drop too less will make the batter THICK. Be exact when measuring the water. If your banana is on the larger side, then back off the amount of water you use.

  • Spray your pan down between each pancake and don’t cook on too high heat. Nice and slow under medium heat. I use avocado oil spray.
  • I like to use a flexible offset spatula to get the edge of the pancakes up and then switch to a traditional spatula to do the flipping.
  • My favorite thing to top them with is zero sugar added Reddi Wip spray whipped cream and Choc Zero sugar free Maple Syrup. It’s hands down the best sugar free maple syrup out there.

 

Protein Pancakes

Fluffy protein pancakes made with pancake mix, vanilla protein powder and smashed banana. Taste amazing and have perfect texture.

Ingredients
  

  • 1/2 c protein pancake mix clean simple eats
  • 1 scoop vanilla protein powder clean simple eats
  • 1 medium banana ripe
  • 1/2 c water
  • 1/2 tsp cinnamon
  • 1 packet stevia sweetener
  • 1 tsp vanilla

Instructions
 

  • Smash ripe banana in a bowl.
  • Add pancake mix, protein powder, sweetener, cinnamon, water and vanilla. Mix.
  • Preheat a pan just under medium heat.
  • Spray with oil before each pancake.
  • Pour in 1/3 of the batter and flip when bubbles have formed over the surface of the pancake.
  • Top with your favorite fixings and enjoy.
