Huevos Rancheros has been my newest breakfast obsession. It’s a crispy tostada topped with a fried cheese egg and fixings. Sour cream and salsa are non-negotiables but guacamole would also be amazing. A lot of recipes call for pico de gallo, beans or cilantro. But I think minimal is best so you can taste the fried cheese. That’s what sets this huevos rancheros recipe apart. If you’ve never had fried cheese with a fried egg, today is your day. When you pair it with the crunch of the warm tostada, the cool sour cream and the sweet salsa, it is CHEF’S KISS.

Huevos Rancheros
Quick and easy version of huevos rancheros with a fried egg, fried cheese on a crisp tostada topped with sour cream and salsa.
Ingredients
- 2 corn tostadas
- 2 large eggs
- 1/3 c monterey jack cheese shredded
- 2 tbsp sour cream
- 2 tbsp salsa
- sea salt
Instructions
- Preheat a pan just under medium heat.
- Spray down with cooking spray.
- Add cheese to the pan in two separate piles, spread out evenly.
- Crack an egg over each pile of cheese.
- Break the egg yolk open for quicker cooking.
- Top with the lid. Cook for 3 minutes.
- While the eggs and cheese cook warm the corn tostadas over a low flame of a gas stove or pop in the microwave for 30 seconds.
- Add each fried cheese egg on top of a tostada, top with flaky salt and cover in a tablespoon of sour cream on each and a tablespoon of salsa on each.
- Enjoy immediately!
