Huevos Rancheros

Quick and easy version of huevos rancheros with a fried egg, fried cheese on a crisp tostada topped with sour cream and salsa.

Ingredients
  

  • 2 corn tostadas
  • 2 large eggs
  • 1/3 c monterey jack cheese shredded
  • 2 tbsp sour cream
  • 2 tbsp salsa
  • sea salt

Instructions
 

  • Preheat a pan just under medium heat.
  • Spray down with cooking spray.
  • Add cheese to the pan in two separate piles, spread out evenly.
  • Crack an egg over each pile of cheese.
  • Break the egg yolk open for quicker cooking.
  • Top with the lid. Cook for 3 minutes.
  • While the eggs and cheese cook warm the corn tostadas over a low flame of a gas stove or pop in the microwave for 30 seconds.
  • Add each fried cheese egg on top of a tostada, top with flaky salt and cover in a tablespoon of sour cream on each and a tablespoon of salsa on each.
  • Enjoy immediately!
