Preheat a pan just under medium heat.
Spray down with cooking spray.
Add cheese to the pan in two separate piles, spread out evenly.
Crack an egg over each pile of cheese.
Break the egg yolk open for quicker cooking.
Top with the lid. Cook for 3 minutes.
While the eggs and cheese cook warm the corn tostadas over a low flame of a gas stove or pop in the microwave for 30 seconds.
Add each fried cheese egg on top of a tostada, top with flaky salt and cover in a tablespoon of sour cream on each and a tablespoon of salsa on each.
Enjoy immediately!
