If you’re looking to use up your bananas in a special way, try making my banana bread recipe in donut form! The only difference is you only use three bananas instead of four. The reason for only using three bananas is a fourth could make the batter too wet for the donuts to hold their shape. The individual donuts are the perfect portion and look even more beautiful than a loaf of banana bread. These banana streusel donuts are so great because they won’t make you feel icky. They are the perfect portion and not overly sweet, so you can enjoy them all day long.

One of the best things about this recipe is you don’t need a mixer. You can mix everything by hand with a fork or whisk.

 

Tips for the Best Banana Streusel Donuts

  • Number one tip is to use VERY RIPE bananas. You want black dotted bananas. The flavor comes from the ripeness of the bananas. There is no point in making these with partially green bananas. Be patient and let them ripen.
  • Grab these silicone mold donut pans. It’s going be really hard to make this recipe without them.
  • Use the PAM baking spray, which includes flour in the non-stick spray. It’s the goat.

    Banana Streusel Donuts

    A fun-take on my banana bread recipe that creates light cake-like banana donuts with an incredible crunchy streusel topping.

    Ingredients
      

    • 3 very ripe bananas
    • 1/3 c kerrygold salted butter (5 1/3 TB) melted
    • 1 c sugar
    • 1 egg
    • 1 tsp vanilla
    • 1 1/2 c flour
    • 1 tsp baking soda
    • pinch of salt

    Streusel Topping

    • 2 tbsp kerrygold salted butter cold, diced
    • 1/3 c light brown sugar packed
    • 2 tbsp flour
    • 1/4 tsp cinnamon

    Instructions
     

    Streusel Topping

    • Add flour, brown sugar, cinnamon and cold diced butter to a bowl. Using a pastry cutter cut into the mixture until it all comes together and you have pea-size crumbles (largest) down to small crumbs. Set aside.
    • Add bananas to another bowl and smash.
    • Add sugar, melted butter, egg and vanilla to the bananas and mix.
    • Add flour, baking soda and salt to the banana mixture. Stir.
    • Grease donut molds and place on a foil or parchment lined cookie sheet. Fill with 1/4 C of batter. Top with the streusel topping.
    • Bake at 350 for 20 minutes.
    • Cool for 10 minutes and remove from the molds. Drizzle in melted butter for extra decadence.
