Marinated Tomatoes is an adaptation of the Half Baked Harvest marinated cherry tomatoes with burrata recipe. The most significant difference is the measurements. Her recipe creates a much for herbacious forward flavor that I felt lacked balance. The thyme was so strong that it was distracting. My recipe halves the thyme and 3x the amount of honey. This creates a sweet and savory flavor that compliments the tomatoes perfectly. Pairing the tomatoes with buratta and crusty bread is the only way to do it. This is my absolute favorite spring and summertime appetizer.

Marinated Tomatoes

Sweet cherry tomatoes marinate for hours in a honey, balsamic dressing packed with garlic, basil and thyme. Perfect with a side of burrata cheese and crusty bread.

Ingredients
  

Dressing Ingredients

  • 2 tbsp balsamic vinegar
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey heaping
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1/2 c olive oil
  • 1 large clove of garlic grated
  • 1 tbsp thyme leaves
  • 1/2 c fresh basil, packed then julianed
  • 24 oz cherry tomatoes (3 c) halved
  • buratta cheese
  • flakey salt
  • French bread optional

Instructions
 

  • Add balsamic vinegar, apple cider vinegar, honey, grated garlic, salt, pepper and red pepper flakes to a bowl. Whisk until combined.
  • Slowly pour in the olive oil and continue whisking until it emulsifies. Set aside.
  • Remove thyme leaves and basil leaves from their stems, chop and add to the bowl. Stir.
  • Slice tomatoes in half and add to the bowl. Mix, cover and refrigerate for 5 hours.
  • Ladle tomatoes over buratta cheese and serve with warm crusty bread.
