A perfect meal has a carb, protein and healthy fat. This loaded avocado toast delivers just that. The magic that happens when you bite into the egg and the yolk breaks up and drips into the salty prosciutto and smooth avocado underneath. Sourdough toast is the perfect vehicle because it won’t get soggy and holds up to the avocado and egg yolk so well. Thanks to Ina, one of my culinary idols for this simple yet delicious recipe.

 

Loaded Avocado Toast

Loaded avocado toast is a fabulous breakfast idea that I got from the great Ina Garten in one of her cookbooks. So simple. So delicious.

Ingredients
  

  • Sourdough toast
  • 1/2 smashed avocado
  • Squeeze of lemon
  • Salt & pepper to taste
  • Prosciutto
  • Fried eggs

Instructions
 

  • Toast slices of sourdough bread in a pan over medium heat or in the oven.
  • Bake the prosciutto on 375 til crisp, about 7-8 minutes. Set aside.
  • Pan fry a couple eggs over medium heat in butter until done to your liking.
  • Smash 1/2 an avocado along with salt, pepper and a squeeze of lemon in a bowl. Mix then spread over two pieces of toast. Top with crispy prosciutto and a fried egg.
