Crispy Fish Tacos
Crispy Fish Tacos (the easy way). I came across this hack when @gortonsseafood hired me last year to do an ad for them (hi 👋 I’m still here 😂). My daughter elle begged me to make them again so here we are. The corn was a super good addition. Get FRESH. Don’t you dare use frozen or canned (even worse).
Ingredients
- 2 bags frozen fish filets
Corn ingredients
- 4 ears of corn, cut from cob
- 4 tb butter
- 1 tsp salt
- 1/2 tsp pepper
- few shakes cayenne
- 2 tsp sugar
Avocado crema ingredients
- 1 avocado
- 1/2 c sour cream
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/4 lime, squeezed
- Slaw mix
- Tortillas
- Spicy mayo (I buy P.F. Chang’s)
Instructions
- Bake fish for 20 min then flip and cook 7 minutes more. Cut corn off 4 ears of corn. Melt butter, add corn and cook 5 minutes over medium heat. Add sugar and seasoning and cook for 10 minutes. You want the starch taste gone but you still want the corn to snap in your mouth.
- Mix avocado crema ingredients together. Not hard.
