Rice Krispies Treats Ceral: Nostalgia in a Bowl

 

Growing up Rice Krispies Treats Cereal was my absolute favorite. That purple box continued to be my favorite cereal into adulthood until Kellogg’s discontinued it in 2020. By then I wasn’t eating it regularly, but about once a year I would purchase a box and binge eat the whole thing. That cereal was divine. In my opinion it was a perfect balance of sweetness and crunchy texture that didn’t rip up the roof of your mouth and tasted even better with cold milk. When I saw Luke Brown of Cookinginthemidwest.com posted it on Instagram, I screamed and immediately purchased all the ingredients. 

 

This recipe is as close as you can get to the box version. It’s very simple to make just like rice krispies treats. Create the “goo” with melted butter, mini marshmallows, vanilla and a pinch of salt. Once smooth add that to Rice Krispies and a little powdered sugar. The ratios aren’t the same as when you’re making the squares but similar concept. Instead of forming in a pan and cooling, you break the sticky pieces up and bake at 250 degrees to help dehydrate the clusters and get them very crunchy.

 

Once cool you can immediately pour in a bowl and devour. My recommendation is to not add too much to a bowl as they get soggy quickly. Similar way I eat Cinnamon Life — pour the milk first then add small amounts of the cereal and keep refilling to your heart’s desire. 

Rice Kripies Treats Cereal

A homemade version of the discontinued Kellogg's cereal. Rice Krispies get tossed with a mixture of butter, mini marshmallows vanilla and powdered sugar then baked to create crunchy clusters.

Ingredients
  

  • 4 c Rice Krispies Cereal
  • 2 tbsp salted butter
  • 1 1/2 c mini marshmallows
  • 1 tsp vanilla
  • pinch of salt
  • 1 tbsp powdered sugar

Instructions
 

  • Preheat oven to 250 degrees
  • Melt butter in a nonstick pan over medium heat. Add the mini marshmallows, vanilla and salt. Mix until smooth and melted.
  • Add the Rice Krispies to a large mixing bowl and add the mashmallow sauce along with the powdered sugar. Toss everything together until all the cereal is coated.
  • Spread the coated cereal onto a line sheet pan. Use a spatula to break up the pieces into clusters.
  • Bake for 30 minutes, tossing and breaking up the mixture every 10 minutes. Allow to cool and harden for 30 minutes before eating.
