Blondies are the vanilla version of brownies. They can be dense, chewy or fudgy based on ingredients, cook time and the pan you use. These heath blondies are the chewy kind and are chock full of brown sugar, butter and sweet, crunchy toffee bits on top and throughout. The bars are perfectly sweet and salty. Enjoy them warm or with a scoop of vanilla ice cream and experience bliss.

 

This blondies recipe is so simple and doesn’t require a bunch of equipment. You can hand mix or use a stand mixer. The wet ingredients include two kinds of sugar: light brown sugar and granulated sugar. The brown sugar has molasses, which helps retain moisture, so the bars become softer and denser. We don’t want them too dense so that’s why we also add the granulated sugar which helps them rise, allowing more air to bake into the bars. Using high-quality salted butter is key. I always recommend Kerrygold salted butter. The best part is you don’t have to wait for the butter to soften, instead, it gets melted on the stove top. I like to do this step first, so the butter has a chance to cool a little before getting added to the mixing bowl with the eggs and vanilla.

 

For the dry ingredients you’re going to need all-purpose flour, salt, baking powder and corn starch. The little bit of corn starch keeps the gluten in the flour from getting too tough. Just a little trick to create a more perfect bite. I like to sift the dry ingredients to ensure no lumps in the batter. The batter will be very thick. To prevent sticking, line a 9×13 dish with crinkled up parchment paper. Crinkling up the parchment paper makes it lie flat in the dish.

Ingredients
  

  • 1 1/4 c light brown sugar packed
  • 1/2 c granulated sugar
  • 1 c butter (2 sticks) melted
  • 2 eggs large
  • 1 egg yolk large
  • 2 tsp vanilla
  • 2 1/4 c all purpose flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 2 tsp corn starch
  • 8 oz bag Heath toffee bits

Instructions
 

  • Preheat oven to 350 degrees.
  • To a bowl mix melted butter, brown sugar, granulated sugar, vanilla, eggs and egg yolk.
  • In a separate bowl sift together flour, baking powder, corn starch and salt.
  • Slowly add the dry ingredients into the wet.
  • Mix until fully combined.
  • Measure one cup of the Heath toffee bits and add to the batter. Fold in.
  • Line a 9x13 pan with parchment paper.
  • Spread the thick batter into the pan evenly.
  • Bake in the middle rack for 35 minutes uncovered.
  • Remove and allow to cool for 30 minutes before cutting into 15 bars.
