Baked Brie recipes are something I am not privy to as I have never loved the cheese. However, when I saw Erin Obrien’s almond baked brie on Instagram, I was captivated. The sticky caramelized almonds on top of the melted cheese drew me in and inspired me to give the appetizer another try. Upon going to her website, I saw she had no ingredient measurements listed, so this is my interpretation of what the measurements should be based on the video she has posted.

Brie Cheese is a soft, creamy cheese that can be eaten at room temperature or melted, like it is in this recipe. It smells very earthy and has a rich, buttery but also bright flavor. I am not a fan of brie on its own, but when paired with sweet toppings, it is very good. You can serve this dish with crackers, sliced apples (Granny Smith) or crusty baguette.

Tips for the Best Baked Brie

 

  • These measurements are meant for a large 16 oz wheel of Brie. If you can only find the 8 oz. wheels, buy 2. If you’re cooking for a small crowd, just get 1 and halve the rest of the ingredients.
  • Don’t cook the almonds at too high heat or you’ll burn the almonds. You want them toasted, not blackened.
  • Ovens are different, if your Brie is still hard or semi-hard after baking, put it back in. Press into the top to see how firm the cheese is underneath before cutting the rind off. Even if you cut off the rind and it’s not oozing, cover with foil and put back in.

    Almond Baked Brie

    Melted brie gets topped with crunchy, sweet and sticky almonds.

    Ingredients
      

    • 16 oz brie cheese
    • 1 1/2 c sliced almonds
    • 6 tbsp salted butter
    • 9 tbsp honey

    Instructions
     

    • Preheat oven to 350 degrees.
    • Unwrap brie and place in an oven safe dish. Bake for 20-30 minutes until the cheese is melted underneath.
    • While the brie bakes, toast sliced almonds on low medium heat for 5 minutes.
    • Add butter and allow to melt and coat the almonds for 2 minutes.
    • Add honey and allow to melt and cook into the almonds for 5 minutes.
    • Remove the brie and cut off the rind.
    • Pour the sticky almonds on top and serve.
