Preheat oven to 350 degrees.
Unwrap brie and place in an oven safe dish. Bake uncovered for 30 minutes until the cheese is melted underneath.
Once the brie has been in the oven for 15 minutes, start the topping. Toast sliced almonds on low medium heat for 5 minutes. Stirring every 30 seconds.
Add butter and allow to melt and coat the almonds for 2 minutes.
Add honey and allow to melt and cook into the almonds for 5 minutes. Stir constantly. Turn the burner as low as it'll go to keep the topping warm while you get the brie out of the oven.
Use a sharp knife to cut off the top of the rind. Peel off with tongs and discard.
Pour the sticky almonds on top and serve with your favorite crackers.
