Chicken Salad
A mix of rotisserie chicken, hard boiled eggs, celery and green grapes makes a filling chicken salad that's packed with protein.
- 3 oz rotisserie chicken
- 2 hard boiled eggs
- 3 tbsp finely chopped celery
- 1/3 c green grapes quartered
- 2 tbsp light mayonnaise
- 1-2 tbsp sweet relish
- salt & pepper to taste
Add eggs to a soft rolling boiling pot of water for 10-12 minutes then rinse under cool water. Place in cool water for 2 minutes before peeling.
Cut up rotisserie chicken, celery and grapes and dice 2 hard boiled eggs.
Add everything to a mixing bowl along with light mayonnaise, sweet relish, salt and pepper. Mix and eat.
