This chicken salad is packed with a ton of protein and will fill you up. The addition of eggs is a game changer. Once you have it this way, you’ll never go back. Chicken Salad

A mix of rotisserie chicken, hard boiled eggs, celery and green grapes makes a filling chicken salad that's packed with protein.

Ingredients
  

  • 3 oz rotisserie chicken
  • 2 hard boiled eggs
  • 3 tbsp finely chopped celery
  • 1/3 c green grapes quartered
  • 2 tbsp light mayonnaise
  • 1-2 tbsp sweet relish
  • salt & pepper to taste

Instructions
 

  • Add eggs to a soft rolling boiling pot of water for 10-12 minutes then rinse under cool water. Place in cool water for 2 minutes before peeling.
  • Cut up rotisserie chicken, celery and grapes and dice 2 hard boiled eggs.
  • Add everything to a mixing bowl along with light mayonnaise, sweet relish, salt and pepper. Mix and eat.
