Easy Chimichurri Sauce 

 

This easy chimichurri sauce recipe is fresh, garlicky, tangy, and one of my absolute favorite ways to take a good steak to the next level. Made with fresh parsley, garlic, shallots, red wine vinegar, and olive oil, it comes together in just minutes and requires absolutely no cooking.

If you’ve never made homemade chimichurri before, you’re going to love how something so simple can add so much flavor. The fresh parsley and shallots keep it bright, the garlic gives it plenty of savory flavor, and the red wine vinegar adds just the right amount of acidity to balance the richness of the olive oil.

And while you can serve chimichurri with chicken, pork, vegetables, or even crusty bread, steak is my favorite way to eat it. The bright, herby sauce is the perfect contrast to a rich, juicy steak.

 

What Is Chimichurri Sauce?

Chimichurri is a fresh herb sauce that originated in Argentina and Uruguay and is traditionally served with grilled meats. There are different variations, but green chimichurri—or chimichurri verde—typically combines fresh herbs, garlic, vinegar, olive oil, and seasonings.

Unlike a pesto, chimichurri doesn’t contain cheese or nuts. It’s also looser and more acidic, making it especially good spooned over rich grilled meats.

Chimichurri Sauce Ingredients

You’ll need:

● ¾ cup olive oil

● 3 tablespoons red wine vinegar

● 3 tablespoons minced shallots

● ½ cup finely chopped fresh parsley

● 3 large cloves garlic, minced

● 1¼ teaspoons kosher salt

● ¾ teaspoon freshly ground black pepper

  • 3 tbsp shallots minced
  • 3 tbsp red wine vinegar
  • 1 1/4 tsp kosher salt
  • 3/4 tsp pepper

Instructions
 

  • To a bowl add olive oil, red wine vinegar, chopped parsley, minced shallots, minced garlic, salt and pepper. Stir well. Cover and allow the flavors to come together for an hour before serving.
