Sweet and spicy cucumbers are my new favorite food. A thinly sliced seedless cucumber gets doused in the most delicious sweet and spicy peanut sauce. Each drippy crunchy bite sends me out of this world and back. The craziest part is it’s macro friendly and you would never ever know. The entire dish is about 235 calories. Seriously, I could live the rest of my life just eating these cucumbers and be happy.
The peanut sauce is comprised of not actual peanut butter, rather, pbfit peanut butter powder. This saves a ton of calories and fat plus adds more protein. If you don’t have it and want to make this right away just use one tablespoon of creamy peanut butter. The other sauce ingredients are low sodium soy sauce, sesame oil, rice vinegar, stevia sweetener, sriracha, and chili crunch. If you don’t do well with spicy food then leave out the teaspoon of sriracha. The chili crunch will have enough kick for you.
Be sure to grab a seedless cucumber for this recipe. Those are the long ones usually wrapped in plastic wrap in the produce section of your grocery store. The best way to slice it is using a mandolin slicer. This produces even slices quickly. You can slice the cucumbers directly into the bowl you made your sauce in. It’s efficient and super fun!
If you want to make this a meal grab a couple packets of sweet and spicy tuna made by either Chicken of the Sea or Starkist. I dump them right in. This would also pair well with immitation crab meat or shrimp.
Sweet and Spicy Cucumbers
Ingredients
- 1 seedless cucumber thinly sliced
- 2 tbsp PBfit peanut butter powder or 1 tbsp creamy peanut butter
- 2 tbsp water
- 2 packets stevia sweetener
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 tsp sriracha (if you like extra spice)
- 1 tbsp chili crunch Momofuku
- 1 tbsp low sodium soy sauce
Instructions
- Add all the sauce ingredients to a bowl and whisk well.
- Using a mandolin slice the cucumbers into the bowl or thinly slice using a sharp knife.
- Toss and top with sesame seeds (optional).
