Tortellini Soup
Because tortellini fits on a spoon and lasagna noodles do not. Y’all really trying to eat those noodles with that spoon 😂 this is so much easier and not to mention tortellini has cheese stuffed inside 🤤 Here’s my suggestion, use sweet Italian sausage the first time you make it. It needs to be made in its original form first. Then you can do what I do and make it more macro friendly. Because I was in a hurry I didn’t brown the meat first LIKE AN IDIOT. That adds so much flavor. So START with browning the meat. We want it caramelized people. This takes a lil time. Do it just a hair under medium heat. Brown bits are our friend. Ingredients
- 1 lb Sweet Italian Sausage
- 1 Yellow Onion, Diced
- 5 Cloves Garlic, Minced
- 2 tbsp Sherry cooking wine to deglaze pan after cooking meat and onions
- 28 oz Can Crushed Tomatoes
- 6 oz Can Tomato Paste
- 36 oz Chicken Stock (one box)
- 1 tsp Italian Seasoning
- 1 tsp Salt
- 1/2 tsp Pepper
- 8 oz Cream Cheese, Softened (one block)
- 36 oz Frozen Tortellini
- Handful fresh spinach leaves
Instructions
- Brown sweet Italian sausage for 15 min.
- Add the diced onion and cook 10 min.
- Add the minced garlic and cook 2 min more.
- Then add the crushed tomatoes, tomato paste, chicken stock and seasoning.
- Stir. Cover. Simmer for 30 min.
- Turn heat to high and add the cream cheese.
- Whisk until it’s fully incorporated. Add frozen tortellini, cook 2-3 minutes.
- Add spinach. Stir and serve.
- **test your tortellini after 2-3 min, yours may need more time but mine didn’t.**
