Cheesy Chicken & Broccoli Casserole

Cheesy chicken and broccoli casserole is so dang yummy. When you get that perfect bite with the soft rice, fresh broccoli, oozy cheese, strings of chicken and crunch of cracker it’s other worldly.

Equipment

  • 1 Steamer

Ingredients
  

  • 3 c Dry Rice, Cook it and Refrigerate
  • 1 Rotisserie Chicken, Shredded
  • 1 Onion, Diced and Cooked
  • 3 Crowns of Broccoli, Chopped Steamed
  • 1 lb Velveeta, Cubed
  • 1 Stick Salted Butter, Cubed
  • 2 Cans Cream of Chicken Soup
  • 1 1/2 salt Salt
  • 1 tsp Pepper
  • 2 Sleeves Ritz Crackers
  • 5 tb Melted Salted Butter

Instructions
 

  • Bake 350 45 min or until it’s hot and the topping is golden brown.

Notes

My tip is to NOT over steam your broccoli. You want good texture and not mush. The different textures are part of the appeal. I used minute rice for this recipe. To clear up any confusion, you’re gonna measure out 3 C of rice and cook it. For the topping I used 2 sleeves of ritz + 5 TB melted butter and combined them in a gallon size ziploc bag.
