This high protein dessert reminds me of Snicker’s ice cream bars except they’re sugar free and pack 14 grams of protein each. The bars are a vanilla ice cream base with caramel sauce, salted peanuts, covered in chocolate and topped with flakey sea salt. The ice cream for this recipe is made with the Ninja Creami ice cream machine. I highly recommend investing in one of these machines not only for this amazing high protein dessert, but all my other high protein macro-friendly ice cream recipes posted here. If you don’t have a Ninja Creami and are dying to make a version of this, grab a pint of a lower calorie vanilla ice cream option at the store. Be aware the nutritional info will be different than what I’ve listed.

 

The protein ice cream is made with Fairlife skim milk, Clean Simple Eats vanilla protein powder, sugar free vanilla instant pudding mix, vanilla and salt. Once all the ingredients are blended together in the pint container, it has to harden in the freezer for 24 hours. Once it’s gotten nice and hard in the freezer, you’ll mix it on the lite ice cream cycle, then add a couple tablespoons of skim milk and run it on the re-spin cycle and it’s ready to spread into a parchment lined bread dish or pan. The ice cream gets topped with sugar free store-bought caramel sauce, I use Smucker’s, followed by a serving of salted peanuts. That gets put in the freezer to harden for three hours. The mixture has to get hard enough to cut into bars and not melt when hot melted chocolate gets drizzled on top. The brand of sugar free chocolate chips I recommend is Choc Zero. They taste the best out of all the sugar free chocolate I’ve tried.

 

Once the bars are drizzled in melted chocolate, they’re finished off with a sprinkling of flakey sea salt. Don’t skip this step. It takes them over the top. Allow to set in the freezer for ten minutes before devouring. If storing long term be sure to thaw each bar for five minutes before consuming. These bars are sure to please any sweet tooth!

High Protein Snickers Ice Cream Bars

A delicious high protein, sugar free version of the Snicker's ice cream bar.

Equipment

  • 1 creami ice cream maker

Ingredients
  

Ice Cream

  • 2 scoops vanilla protein powder clean simple eats
  • 2 c Fairlife skim milk
  • 1 tsp vanilla
  • 2 tbsp sugar free instant vanilla pudding mix
  • pinch salt
  • 2 tbsp Fairlife skim milk

Bars

  • 1 pint prepared protein ice cream or store bought
  • 1/4 c sugar free caramel sauce Smucker's
  • 1/4 c salted peanuts
  • 1 c sugar free chocolate chips Choc Zero
  • 1 tsp coconut oil
  • flakey sea salt

Instructions
 

  • Blend together 2 c skim milk, protein powder, pudding mix, vanilla and salt. Pour into a Ninja Creami container and freeze for 24 hours.
  • Remove from the freezer and place in the holder. Run on the lite ice cream cycle.
  • Remove the lid pour in 2 tbsp skim milk, replace the lid and run on the re-spin cycle.
  • Spread the entire pint of ice cream into a parchment lined loaf bread dish or pan.
  • Top with sugar free caramel suace.
  • Top with salted peanuts, pressing the peanuts down into the caramel.
  • Cover and freeze for 3 hours.
  • Remove from freezer and cut into 6 even bars. Put back in the freezer while you melt the chocolate chips.
  • Add 1 c chocolate chips to a microwave safe bowl along with coconut oil.
  • Cook for 1 minute and stir. Put back in if chocolate isn't runny and melted for 20 more seconds.
  • Coat the bars on top with a base coat of melted chocolate. Follow with an additional drizzle back and forth.
  • Top with flakey sea salt. Allow to set in the freezer for 10 minutes. Enjoy!
  • Store in the freezer and thaw for 5 minutes before eating if solid.
