Blueberry crumble is a dessert made with fresh or frozen blueberries, topped with a mixture of butter, flour, oats and sugar. The name comes from the texture of the topping. It’s sweet and crumbly. As with any crumble or crisp recipe, they’re usually loaded with sugar and calories. And you definitely shouldn’t eat them for breakfast. Now I’m going to ask you to throw all that out the window. There is a way to make a blueberry crumble that is high protein, has great macros and is balanced enough to have the first meal of the day.

 

The only sweetener in the topping is one tablespoon of sugar free maple syrup.  I recommend the Choc Zero brand. It is the best on the market. The maple syrup gets added to the topping which consists of quick cooking oats, vanilla protein powder, cinnamon, water and pinch of salt. The blueberries also add sweetness once they’re cooked but I like to add a couple packets of stevia in mine just incase. They break open and mix with the vanilla and corn starch to create that signature “goo.” No need to preheat the oven. If using frozen blueberries, add 30 seconds of cook time to achieve this. The microwave does all the cooking in two minutes. Don’t worry, the texture comes out just as if it were baked.

 

I use Clean Simple Eats vanilla protein powder for this recipe. Each serving is 20 grams of protein. This brand has the best flavor in my opinion. High Protein Blueberry Crumble

A single serving blueberry crumble that can be breakfast or dessert!

Ingredients
  

  • 1 c blueberries
  • 1/2 tsp corn starch
  • 1/2 tsp vanilla extract
  • 2 packets sugar substitute Truvia

Crumble Topping

  • 1/3 c quick cooking oats
  • 1 tbsp sugar free maple syrup
  • 1 serving vanilla protein powder clean simple eats
  • 1/2 tsp cinnamon
  • pinch salt
  • 1-2 tbsp water

Instructions
 

  • Mix blueberries, vanilla and corn starch together in a cereal bowl and microwave for 1 minute.
  • Mix together oats, maple syrup, protein powder, cinnamon and salt.
  • Add water 1/2 tbsp at a time to the topping and mix until a crumbled texture forms.
  • Put all the topping on top of the halfway cooked blueberries and put back in the microwave for 1 more minute. If your crumble needs more time, microwave 10 seconds at a time.
  • Top with whipped cream and cinnamon.
