Healthy Samoas are a fun take on the beloved Girl Scout cookie but with a healthy twist. While the final product doesn’t taste exactly like a Samoa, the flavor profile is right (caramel, coconut, chocolate) and the texture is out of this world. The dates caramelize when processed in the food processor and create the most insane chewy texture. There isn’t a crunchy cookie base, but with texture like this, you won’t miss it. I first saw this recipe from cooking influencer eatingbirdfood in 2022. I was so impressed with the concept that I had to try it for myself.

 

The recipe is mostly free of processed sugar. If you’d like to substitute the semi-sweet chocolate for sugar free chocolate, my recommendation is choc zero milk chocolate chips. They are the best sugar free chocolate on the market in my opinion. They also offer dark chocolate, butterscotch, white chocolate and peanut butter. Off topic, but I can also highly recommend the Choc Zero Maple Syrup. When I was on the keto diet for a year, I became very familiar with all the sugar free options and this brand blew the competition out of the water.
