Chewy Peanut Butter Sheet Pan Brownies

These chewy peanut butter brownies with fudge icing are insanely delicious. I snagged one of @halfbakedharvest icing recipes for this and it paired perfectly. These are perfectly chewy brownies with just enough peanut butter but not too much to overpower. What I love about the icing is the recipe allows to add more or less powdered sugar. The less you add the darker and harder the icing will be (like a Texas sheet cake icing). I actually pulled video footage from both batches I made so if you notice the icing at the beginning is lighter it’s because in the end that’s the recipe I went with. The darker icing was made with just 2 C powdered sugar and at the end of the day it was delicious but I wanted a little more sweetness. If you like dark chocolate over milk chocolate then you’ll want to only use 2 C powdered sugar.

Ingredients
  

  • 12 tb Salted Butter, Softened (Kerrygold)
  • 1 c Light Brown Sugar, Packed
  • 1 1/3 c Sugar
  • 1 1/2 c Smooth Peanut Butter (I used the honey creamy kind from Kroger)
  • 2 tsp Vanilla
  • 4 Eggs
  • 2 c Flour
  • 2 tsp Baking Powder
  • 1 tsp Salt

Icing

  • 1 stick or 8 TB salted butter, softened (Kerrygold)
  • 2 1/2 c Powdered Sugar
  • 1/2 c Cocoa Powder
  • 2 tsp Vanilla
  • 1/4 C + 1 TB warm 2% milk

Notes

If you want a darker chocolate icing then use 2 C powdered sugar and 1/4 C milk and everything else is the same
***HUGE TIP*** after baking your brownies if you realized you didn’t spread out the batter evenly enough before baking, you can drop the pan on the ground 10 inches from the ground and it will spread the soft brownies out perfectly. Have to do it when they’re warm out of the oven. I had to do it with my second batch. I dropped it on the ground 3 times because it was so satisfying. Make sure you’re holding on both sides of the pan so the pan hits the ground flat and not one side hits before the other. Know what I mean?
