I know cottage cheese queso doesn’t sound appetizing, but I promise if you give it a try, you’ll be shocked at the final result. This recipe is made with 2% fat cottage cheese (I love the brand Good Culture), Velveeta, taco seasoning, salt and Rotel. Everything cooks together on the stove top, and you’d have no idea the cottage cheese is in there.  The key is whipping the cottage cheese in a food processor or small blender. When the texture goes from curds to whipped, it blends seamlessly with the Velveeta. The taco seasoning, Rotel and Velveeta dominate the flavor profile and the cottage cheese ends up being a high protein filler that you don’t know is there.

 

Pair with my favorite macro friendly popcorners tortilla chips and you have a guilt free appetizer or snack. This cottage cheese queso recipe makes a single serving, and the macros are as follows: 185 calories, 18 grams of protein, 6.5 grams of fat, 12 grams of carbohydrates. Cottage Cheese Queso

Rich and creamy single serving high protein queso dip.

Ingredients
  

  • 1/2 c 2% fat cottage cheese Good Culture
  • 1 oz Velveeta cheese cubed
  • 1 tbsp taco seasoning
  • 2 tbsp Rotel
  • pinch salt

Instructions
 

  • Add cottage cheese to a food processor or blender and blend until smooth.
  • Add whipped cottage cheese to a small pot followed by the cubed Velveeta.
  • Melt together over low medium heat, whisking until creamy and combined.
  • Add the salt, taco seasoning and Rotel. Mix and allow to heat through for a minute then serve.
