Pumpkin Coffee Cake

This is my favorite fall recipe. I stumbled across it last year and I’ve made it several times since. @sallysbakeblog truly knocked it out of the park with this one. Make it!

  • 1 Bowl

Ingredients
  

Wet ingredients

  • 1 C pumpkin puree
  • 1/2 C brown sugar
  • 1/2 C canola or vegetable oil
  • 1/4 C maple syrup
  • 1/4 C whole milk

Dry ingredients

  • 2 C flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp ground ginger

Crumble topping

  • 1/2 C flour
  • 1/2 C packed brown sugar
  • 1 1/2 tsp cinnamon
  • 5 TB cold diced butter
