Pumpkin Bread with a Maple Glaze

The flavors of Fall are in this pumpkin bread. The texture is insanely moist with the perfect balance of pumpkin, spice and maple. The glaze adds the perfect sweet element to really make it a treat.

Ingredients
  

  • 1 C pumpkin puree
  • 1 1/2 C granulated sugar
  • 2 eggs
  • 1/2 C vegetable oil
  • 1/3 C water
  • 1 3/4 C flour
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 3/4 tsp salt

Maple Glaze

  • 1/2 c powdered sugar
  • 1/4 c maple syrup real maple syrup
  • 1/2 tsp vanilla bean paste or vanilla extract
  • 1/4 tsp maple flavor
  • 1/4 tsp kosher salt

Instructions
 

  • Mix pumpkin puree, eggs, granulated sugar, vegetable oil and water to a bowl. Whisk by hand.
  • Whisk together dry ingredients in a separate bowl .
  • Add dry ingredient to the wet. Whisk until everything is incorporated. Don't over mix.
  • Pour batter into a greased 9x5 loaf pan and bake on 350 for 1 hour 15 minutes.
  • Let the bread rest for 20 minutes.
  • Toward the end of resting make the glaze by whisking all the ingredients in a bowl. The glaze should be thick but still pourable. Remove the bread from the pan and place on a wire rack. Pour the glaze over the bread.
  • Let rest for 10 minutes then slice and serve.
