Dice up fresh or canned peaches and add to a bowl.
To the bowl add lemon juice, vanilla, sweetener, cinnamon and cornstarch. Mix and microwave for 1 minute.
In a separate bowl combine quick cooking oats, protein powder, salt, cinnamon, maple syrup and water 1/2 tbsp at a time. Mix until it forms a crumbly texture.
Top the half-cooked peaches with the topping and microwave another minute.
