High Protein Peach Crumble

A single serving peach crumble that can be breakfast or dessert!

Ingredients
  

  • 1 c diced peaches
  • 3-4 packets of Stevia
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/2 tsp cornstarch
  • 1/2 tsp lemon juice

Crumble Topping

  • 1/2 c quick cooking oats
  • 1 serving vanilla protein powder
  • 1 tbsp maple syrup
  • 2 tbsp water
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

Instructions
 

  • Dice up fresh or canned peaches and add to a bowl.
  • To the bowl add lemon juice, vanilla, sweetener, cinnamon and cornstarch. Mix and microwave for 1 minute.
  • In a separate bowl combine quick cooking oats, protein powder, salt, cinnamon, maple syrup and water 1/2 tbsp at a time. Mix until it forms a crumbly texture.
  • Top the half-cooked peaches with the topping and microwave another minute.
  • Top with whipped cream.
