Cauliflower Mac and Cheese

Cauliflower replaces noodles and gets paired with a gooey cheese sauce.

Ingredients
  

  • 1 1/2 Heads of Cauliflower
  • 8 oz Velveeta cheese cubed
  • 1 tbsp butter
  • 3 tbsp half and half
  • 1/2 c part skim mozzarella cheese
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1 tsp ground mustard

Instructions
 

  • Wash and cut cauliflower into bite size pieces.
  • Add cauliflower pieces to boiling water and set a timer for 5 minutes.
  • Strain the cauliflower and put the pot back on the stove and lower the heat to low/medium.
  • Melt butter first then add the cubed Velveeta and half and half. Whisk until fully melted.
  • Add the salt, pepper and ground mustard. Whisk.
  • Add the cooked cauliflower to the cheese sauce and stir.
  • Add the mozzarella cheese and stir again.
  • Serve hot and fresh.
